Today We recommend "Pizzeria del Bersagliere", in Via Candia. Excellent "roman" pizzas, very thin and accompanied by the classical fry-ups and "contorni" (entrées), such as "bruschette" (toasted bread rubbed with raw garlic, with salt, olive oil and sometimes freshly cut tomatoes), "filetti di Baccalà " (salt cod fillets), "supplì" (rise croquettes). One of the last "Trattorie-Pizzerie" of Rome which has kept the genuine nature of the roman "Osterie". Please, notice the hostess with the typical apron of roman "matrone" (matron) and the bonnet. It is worth at least stopping there just to see her.
